Wicked Fudge Recipe
1 One-pound bag of Ghirardelli 60% Cocoa chocolate chips
2/3 cup of Ghirardelli Semi-Sweet chocolate chips
1 can sweetened condensed milk
1 tablespoon vanilla extract
Combine all ingredients in 4-cup microwaveable container. Microwave on HIGH for 3-1/2 minutes. Use a potholder to remove from microwave, as it will be very hot. (Alternatively, you can heat over a stove in a heavy-bottomed pot or double-boiler, strring constantly to prevent burning)
Stir until smooth (takes a lot of elbow grease). Pour into a 9”x9” pan (helps to line with wax paper, to prevent sticking), and chill for 2-3 hours. Cut and serve.
You can also add nuts if you prefer, and/or replace the vanilla extract with other flavorings*. Recipe is very flexible.
Alternately, can use bread loaf pans, cool longer. Or - use spatula to press still warm mix into a cake decorator or cookie press and make individual pieces - squeezing them out onto sheets of wax paper and chill for 2 hours before serving. Enjoy!!! * if you want a flavoured fudge, can replace vanilla extract with one of the following (or invent your own!) pure extracts of: orange peppermint cinnamon hazlenut cherry ..etc.. Also, can add various nuts, dried fruits, the zest from lemons or oranges, swirling in peanut butter, mini marshmellows or marshmellow cream, pour over butter toffee... keep warm and dip fresh fruit... you get the idea!
